As you drive through the southern part of Morocco, the landscape is awash with beautiful Argan trees. Mountain goats are typically seen climbing into the branches of the Argan tree and fodder the fruit from the branches. It’s quite a spectacular view and makes part of the picturesque landscape.
The fruit from the argan tree contains a kernel with a tough shell, inside this pit is where the ‘’liquid gold’’ is found; small seeds about one to three per kernel, holding 60 per cent oil.
The Argan extraction process is an intensive and laborious one and traditionally, these mountain goats played an important part of the Argan production process. The Berber woman would harvest the fruits of the argan tree in the spring and then feed them to the goats whose digestive juices dissolve the coating on the shell.
